



Many items on our product pages are created from original recipes that have been handed down from generation to generation. Some of the recipes date back to the early 1600; and several are from the 1700 and 1800's. This was a long time before the advent of modern refrigeration. Natural protein and gelatins from the animals were used as a binding agent, as well as cold smoking and air-drying to increase the shelf life of the product.
Following these simple traditional guideline's, whilst taking advantage of contemporary means, results in a product that we feel is a far superior product that is well worth the extra time and effort needed for production.
We only use the freshest meat possible, this, along with the use of the finest herbs and spices give each of our products an enhanced and distinctive flavour that is second to none. Where flavour is of the utmost importance and impossible to duplicate we import the spice direct from the source.
Although our methods of preparation are very time consuming, we feel that the end results are suitable for the most discerning taste, and this we feel is worth that extra effort. To us this is not work, but a labour of love.
